Strangozzi are typically Umbrian and are common throughout central Italy.

A long shaped pasta with a rectangular cross-section, simply produced by kneeding soft wheat flour with water and then adding salt.

This curious name, whose variations are 'Strozzapreti' or 'Strangolapreti' (priest-stranglers) derives from the shoelaces used by bandits to ambush the clergy during the times of Papal rule.

 

Strangozzi flavoured pasta is ideal for creating surprising and unusual dishes such as a pairing with Agromonte Crema di Carciofi or simply savoured on its own tossed in melted butter or dressed with your favourite EVO to let the lovely lemon flavour shine through.
